Process and Stages of Making Palm Sugar

The Process of Making Palm Sugar
 
 
  1. The sap is poured while filtered with wire mesh made of copper, then placed on the waiting fireplace to be immediately heated (boiled). This heating lasts for 1-3 hours, depending on the amount (volume) of sap. Heating is done while stirring the sap until boiling.
  2.  The froth that appears on the surface of the boiling room is discarded, so that the colored palm sugar that is not too dark (black) can be obtained, dry and durable. This heating was ended after the roomie became thick with a volume of around 8%.
  3. Stirring is done more often until palm sugar becomes thick. In this phase also cleaning from foam and fine dirt. Then palm sugar is printed in wood mold by cleaning the mold first using lime water and soaking it with clean water to facilitate the release of palm sugar later.

  1. The process of producing palm sugar is almost the same as print sugar, the difference is that palm sugar is a longer cooking process compared to printed palm sugar. After the cooked palm juice turns thick, the fire is then reduced. After 10 minutes, the cauldron is removed from the furnace and stirring slowly until crystallization occurs.
  2.  After crystallization, stirring is accelerated until a coarse powder is formed. This coarse powder is called semi-finished palm sugar with water content above 5%. Semi-finished palm sugar is mashed so that the crystal sugar that is still clumping becomes smoother.
  3.  After that the screening process is carried out with a mesh size between 15-20 in accordance with the order.
